Abstract
Tanaman jamur tiram (Pleurotus Florida) merupakan salah satu tanaman jamur kayu dan jamur pangan (Edible Mushroom) yang banyak dikonsumsi masyarakat. Jamur ini memiliki tubuh buah yang tumbuh mekar dengan berbentuk corong dangkal seperti kulit kerang (tiram). Di Indonesia jamur mudah ditemukan dan dijangkau oleh semua kalangan masyarakat. Jenis-jenis olahan jamur beragam, sehingga orang-orang banyak berinovasi dengan menggunakan bahan jamur salah satunya beef patty subtitusi jamur tiram. Dengan menggunakan metode uji hedonic. Inovasi pada beef patty dengan subtitusi jamur tiram diterima oleh responden.
Oyster mushroom (Pleurotus Florida) is one of the most widely consumed wood and edible mushroom (Edible Mushroom) plants. This mushroom has a fruiting body that grows in bloom with a shallow funnel shaped like a shell (oyster). In Indonesia, mushrooms are easy to find and reach by all people. There are various types of mushroom preparations, so people innovate a lot by using mushroom ingredients, one of which is beef patty with oyster mushroom substitution. By using the hedonic test method. The innovation on beef patty with oyster mushroom substitution was accepted by the respondents.
