PEMBUATAN NUGGET AYAM PENAMBAHAN ONCOM MERAH (Neurospora Intermedia Var) dan WORTEL (Daucus Carota L) SEBAGAI APLIKASI FUSION FOOD

ABSTRAK

Nuggets are a very popular food, but have relatively expensive ingredients. However, the presentation of nuggets is still less varied. One variation of the nuggets that has been developed is using red oncom and carrots. Utilization of red oncom and carrots in the manufacture of nuggets aims to be an alternative material that is more affordable and to determine the quality of the nuggets that have been innovated as the main ingredient. This study used a quantitative method by conducting a hedonic test involving 25 semi-trained panelists by assessing the level of preference for nuggets on a scale of 1 to 5 for aroma, taste, texture and color. This research was conducted in Building E, 3rd floor, Jakarta Creative Media State Polytechnic. By doing 2 formulations as follows: X (100% chicken meat), Y treatment (60% Chicken Meat : 30% Oncom : 10% carrots), Z treatment (50% Chicken Meat : 40% Oncom : 10% Carrots) with each - each 2 repetitions. This formulation refers to Aan W's recipe book entitled 20 recipes for nugget creations. When the hedonic sensory test was carried out, the results obtained were that sample Z with the formulation (50% Chicken : 40% Oncom : 10% Carrot) was superior in indicators of aroma, color, and texture, whereas in taste indicators it was superior to sample X (100% control Chicken). For the cost of goods sold, formulation 1(Y) and formulation 2(Z) are cheaper, namely Rp. 16,769/package compared to Control (X) at a price of Rp. 24,365 / packaging.

Nugget merupakan makanan yang sangat populer, namun memiliki bahan yang relatif mahal. Akan tetapi dalam penyajiannya nugget masih kurang bervariatif. Salah satu variasi nugget yang dikembangkan adalah dengan menggunakan oncom merah dan wortel. Pemanfaatan oncom merah dan wortel dalam pembuatan nugget bertujuan sebagai alternatif bahan yang lebih terjangkau serta untuk mengetahui kualitas nugget yang telah diinovasi bahan utamanya. Penelitian ini menggunakan metode kuantitatif dengan melakukan uji hedonik melibatkan 25 panelis semi terlatih dengan menilai tingkat kesukaan pada nugget dalam skala 1 sampai 5 terhadap aroma, rasa, tekstur dan warna. Penulis melakukan 2 formulasi sebagai berikut : X (100% daging ayam), perlakuan Y (60% Daging Ayam : 30% Oncom : 10% wortel), perlakuan Z ( 50% Daging Ayam : 40% Oncom : 10% Wortel) dengan masing-masing 2 kali pengulangan. Pada saat dilakukan uji sensori hedonik hasil yang didapat bahwa sampel Z dengan formulasi (50% Ayam : 40% Oncom : 10% Wortel) pada indikator aroma, warna, dan tekstur lebih unggul, sedangkan pada indikator rasa lebih unggul sampel X (Kontrol 100% Ayam). Untuk harga pokok penjualan formulasi 1(Y) dan formulasi 2(Z) lebih murah yaitu Rp. 16,769/Kemasan dibandingkan dengan Kontrol (X) dengan harga Rp. 24.365/Kemasan.
