Abstract

Buntil is a traditional dish originating from the region of Central Java. Despite its
cultural significance, many urban residents are still unfamiliar with this food. One of
the main ingredients in this dish is papaya leaves, which possess excellent nutritional
content for overall health. The presence of Vitamin D in papaya leaves helps prevent
emphysema, a condition related to the lungs. Additionally, other components of the
dish, such as young coconut and anchovies, contribute to its nutritional value. Young
coconut provides beneficial fats for the body, while anchovies contain essential
amino acids. The taste of buntil made from papaya leaves is predominantly sweet and
slightly spicy, with a subtle hint of bitterness from the papaya leaves. This abstract
highlights the traditional nature of the dish and the nutritional benefits of papaya
leaves, and the keywords include.

Buntil merupakan makanan tradisional yang berasal dari daerah Jawa Tengah.
Banyak masyakarat kota yang belum mengenal makanan tersebut. Salah satu bahan
utama dalam makanan ini adalah daun pepaya. Daun pepaya memiliki kandungan
nutrisi yang baik dalam kesehatan. Vitamin D yang terdapat daun pepaya membantu
mencegah emfisema, yang berkaitan dengan paru – paru. Komponen lain terdiri dari
kelapa muda dan ikan teri juga memiliki kandungan yang baik untuk kesehatan.
Kelapa muda mempunyai lemak yang baik bagi tubuh dan ikan teri mempunyai asam
amino esensial yang baik juga bagi tubuh. Rasa dari buntil daun pepaya dominan ke
manis dan sedikit pedas serta ada rasa pahit sedikit dari daun pepaya.
