PENERIMAAN PASAR IKAN TERI DENGAN VEGETABLE STOCK SEBAGAI BAHAN PENYEDAP KALDU BUBUK

ABSTRACT
Anchovy (Stoplephorus comersonii) is one type of marine
biological resources that is widely distributed in Indonesian waters and
is used as a raw material in the marine fishing industry. National salted
fish production increased by 11.89% in the period 2000-2010. This
research uses a descriptive qualitative method that takes samples from
the elderly and mothers of toddlers, who have knowledge and
information about the Market Acceptance of Anchovy with Vegetable
Stock as a Powdered Broth Flavoring Ingredient. Data is be collected
through the use of observation instruments, documentation, and in-depth
interviews with respondents. Data analysis is carried out qualitatively to
understand the views, perceptions, and attitudes of respondents towards
the product. From the results of this study, it can be seen that the Market
Acceptance of Anchovy with Vegetable Stock as a Powdered Broth
Flavoring Ingredient is obtained through interviews with respondents.
From a population of 215 people in the neighborhood of RT 010,
Ragunan village, South Jakarta, from a total of 215 people the author
took a sample of 37 respondents consisting of 65% elderly and 35%
mothers with toddlers.

Ikan teri (Stoplephorus comersonii) merupakan salah satu jenis
sumber daya hayati laut yang tersebar luas di perairan Indonesia dan
digunakan sebagai bahan baku dalam industri perikanan laut. Produksi
ikan asin nasional meningkat sebesar 11,89% pada periode 2000-2010.
Penelitian ini menggunakan metode kualitatif deskriptif yang mengambil
sampel dari lansia dan ibu mempunyai balita, yang memiliki
pengetahuan dan informasi tentang Penerimaan Pasar Ikan Teri Dengan
Vegetable Stock Sebagai Bahan Penyedap Kaldu Bubuk. Data akan
dikumpulkan melalui penggunaan instrumen observasi, dokumentasi,
dan wawancara mendalam terhadap responden. Analisis data dilakukan
secara kualitatif untuk memahami pandangan, persepsi, dan sikap
responden terhadap produk tersebut. Dari hasil penelitian ini dapat
diketahui bahwa Penerimaan Pasar Ikan Teri Dengan Vegetable Stock
Sebagai Bahan Penyedap Kaldu Bubuk didapatkan melalui wawancara
dengan responden. Dari jumlah populasi 215 masyarakat yang berada di
lingkungan rumah RT 010 kelurahan Ragunan Jakarta Selatan, dari
jumlah 215 masyarakat penulis mengambil sampel sebanyak 37
responden terdiri dari 65% lansia dan 35% ibu mempunyai balita.
