Abstract

ABSTRAK
The demand for plant-based food continues to rise alongside increasing public
awareness of healthy lifestyles and environmental sustainability. Vegetarian
nuggets have become a promising alternative to animal-based products, especially
when made from nutritious local ingredients such as soybeans and lentils. This
study aims to examine market acceptance of a vegetarian analog meat nugget with
the addition of lentils. A quantitative methods by distributing likert and guttman
scale questionnaires to 57 respondents in the Jabodetabek area. Data collection
techniques included surveys, documentation, and limited sales through pre-orders
and business partners. The sample was determined based on the (Hair et al., 2019:
18-21) approach, while data was analyzed based on aspects of taste, texture,
packaging, price, and repurchase intention. The result showed a very high level of
acceptance for aspects of taste (4.47), aroma (4.28), and packaging (4.65), but the
texture aspect was considered to still need improvement (2.33). Repurchase
intention reached 98.2%, and sales in 2 working days of market testing generated
Rp1,812,000. The findings indicate that nuggetul products have the potential to
compete in the market, especially in the nutrition-conscious and environmentally
friendly young consumer segment. Nuggetul has high commercial potential and is
well accepted by consumers, particularly in terms of taste and packaging.

Permintaan terhadap pangan nabati semakin meningkat seiring kesadaran
masyarakat akan gaya hidup sehat dan keberlanjutan lingkungan. Nugget
vegetarian menjadi alternatif yang potensial pengganti produk hewani, terutama
jika berbahan lokal bergizi seperti kacang kedelai dan lentil. Penulisan ini bertujuan
untuk mengetahui penerimaan pasar terhadap nugget vegetarian daging analog
dengan penambahan kacang lentil. Penulisan menggunakan metode kuantitatif
dengan penyebaran kuesioner berskala likert dan guttman kepada 57 responden di
wilayah Jabodetabek. Teknik pengumpulan data meliputi survei, dokumentasi,
serta penjualan terbatas melalui pre-order dan mitra usaha. Sampel ditentukan
berdasrkan pendekatan (Hair et al., 2019: 18-21), dan dianalisis secara deskriptif
kuantitatif. Hasil penulisan menunjukkan tingkat penerimaan sangat tinggi untuk
aspek rasa (4,47), aroma (4,28), dan kemasan (4,65), namun aspek tekstur dinilai
masih perlu ditingkatkan (2,33). Minat beli ulang mencapai 98,2%, dan penjualan
selama 2 hari kerja uji pasar menghasilkan Rp1.812.000 menunjukkan bahwa
produk nuggetul memiliki potensi bersaing di pasar, khususnya di segmen
konsumen muda yang sadar gizi dan ramah lingkungan. Produk Nuggetul memiliki
potensi komersial yang tinggi dan diterima dengan baik oleh konsumen, terutama
pada aspek cita rasa dan kemasan.
